Made in Japan, this knife has a flat edge and a sheepsfoot blade that curves in an angle approaching 60 degrees at the point. The word 'Santoku' refers to the three cutting tasks which the knife performs - slicing, dicing, and mincing. The fluted/ indentations in the blade are intended to reduce sticking or adhesion to the food while cutting.
