Zwilling J.A. Henckels Twin® Sharp Select Sharpener

Use

• Only use this sharpener with uncoated knives that have a straight edge
• Use Module 1 (the one with steel wheels) for coarse sharpening and pre-sharpening
• Use Module 2 (the one with ceramic wheels) for fine sharpening and smoothening
• Place the sharpener on an even anti-slip surface and ensure that your knife is entirely clean and dry 
• Take hold of the sharpener with your left or right hand, such that your thumb and index finger touch and press it slightly onto the surface
• Place the heel of your knife’s cutting edge (near the handle) in a 90° angle into the respective module
• Draw the blade with little pressure towards you with one stroke only
• Do not tilt the blade
• Depending on the degree of bluntness, you may have to repeat this process up to five times
• If your knife is very blunt, use Module 1 first and then Module 2. Knives with only a little degree of bluntness can be sharpened directly using Module 2
• Check the result by cutting a tomato or a sheet of paper

Care

• Do not use any fluids to sharpen knives with this sharpener
• To clean the Twin Sharp Select, simply turn it upside down to get rid of the residual sharpening dust. Use a dry soft cloth to wipe it clean. Do not soak it or put it in the dishwasher as this might damage the sharpener beyond repair
• Never try to open your Twin Sharp Select
• Avoid dropping the sharpener as that may damage it
• Do not use this sharpener with specialty knives or scissors
• The pre-set angle of the sharpening wheels is meant for household knives only. To sharpen Asian knives a different angle might be necessary

How to protect your knives from premature loss of sharpness

• Never use your knives on hard cutting surfaces such as china, metal, marble or granite
• Though knives with plastic handles can be washed in a dishwasher, it is recommended that you clean them by hand for long lasting and durable use. Other appliances in the dishwasher may damage the blades of your knives
• Do not use your knives as screwdrivers or can-openers as that can permanently damage their cutting edge
