    • Do not bend the knife as this may damage the sensitive cutting edge.
    • The knife is not dishwasher safe. Hand wash only and dry immediately. 
    • To avoid rust and discolouration, do not leave the knife in wet or humid spaces.
    • Sharpen with a professional sharpening stone or a Miyabi pull through knife sharpener only.
    • Use the knife with wooden or plastic cutting boards only.
    • Chipping, breakage, or rusting of the blade due to accidental dropping or misuse are not covered by the warranty.

    Crafted in Seki, Japan - a city known for its legendary bladesmithing, Miyabi’s long and slim sushi knife features a strong, semi-flexible blade and a fine cutting edge for clean results. The blade features 101 layers of steel for exceptional cutting performance. Its D-shaped natural Masur birch handle creates a comfortable grip and ensures tireless cutting, even with frequent use, thereby making it perfect for professional chefs.

    What Makes this Knife Truly Impressive

    • The blade comprises 101 layers of steel with 50 layers clad on each side of the Cryodur SG2 microcarbide steel core forming a delicate Damascus pattern with a Rockwell hardness of 63.
    • The Cryodur process ensures ultimate hardness, initial sharpness, cutting edge retention and corrosion resistance. Sharpened to an optimal 9.5° to 12° angle on both sides, the blade delivers scalpel-like precision. 
    • Hand-honed using a traditional three-step “honbazuke” process, the blade is sharpened twice on whetstones with custom grits, followed by mirror polishing on a leather wheel.
    • The “hamon” cutting edge is reminiscent of legendary Japanese swords and is a sign of superior craftsmanship. 
    • The Masur birch handle features an intricate mosaic centre pin, red detailing, and an engraved endcap for an elegant look and feel.
